ok, this is a little complicated, but here i go. ok, i reserved a collectors edition and i just found out it won't be here for a week. so if i go buy a regular edition on launch night will i be able to switch over to the collectors edition once i get it?

No you won't. Once you enter an upgrade key, the option to enter a key is no longer there.
