No they won't. We do not plan to update old items with sockets. There will be plenty of opportunities though to get socketed items whether via questing, drops or crafted.

Before then it makes rings, necklaces, trinkets, and all sorts of other things.
This is correct. I also found the statues to be a pretty effective addition for leveling. For those that don't know, you can make one that functions similiarly to a totem and will do some healing for a bit.
Also, the jewelry that can be created can be fairly useful starting from the lower levels.
