I made an Alliance warrior, and thus got the character I play on my main with all the stuff he was supposed to have. Can't speak for the Horde or the druids.
Server:
-- Generally very crisp and unlaggy, especially for those of us used to servers like good ol' Archimonde.
-- Obviously overwhelmed by the number of people trying to get on Test with premades. I expected this to happen.
Premades:
-- Great way of testing the Tier .5 set, supplied mats seem to be sufficient as far as completing the soloable three pieces.
-- The complete omission of warrior tank gear is a major, unnecessary handicap for the purposes of test.
-- Did someone in Blizzard think it was funny to give the warrior a notoriously DE'd weapon while giving most other classes high grade epics?
Flight Paths:
-- Some could be more direct, but the Final Destination system works and is clear and simple to understand.
-- Connecting through Ironforge is probably going to result in massive lag or a DC for a lot of people on live, reasonably populated servers. If possible, move the flightpath way clear of the city.
Not necessarily a FD problem, just a chronic problem with flying in/out/through IF.
Weather:
-- Did not impact system performance much. Actually somewhat surprised by this, especially as the computer I've been playing on is far from state-of-the-art.
-- Winterspring snowfall was underwhelming once it actually showed up.
Tier .5 Stats/Quality:
This is from a warrior perspective:
-- Bracers are great, fill itemization hole.
-- Belt is great, fills itemization hole.
-- Gauntlets are certainly an upgrade from Valor, but seem under-statted compared to other class .5 Gauntlets (Epic Item Level approximately 52, working backwards). My understanding is that the rogue and priest .5 gloves are also lacking in itemization points.
Tier .5 Quest Chain
-- Populations of mobs/items sufficient for reasonably quick quest completion with normal populations and intensity of focus, as opposed to everyone on the server trying to do it.
-- First three pieces certainly soloable by anyone.
-- Goblin Rocket Fuel requirement moderately annoying for ghostbusting, especially with heavy competition for mobs.
-- 45 minute Baron 5-man looks feasible, at least with a group of people who know each other, know each other's playstyles, and have worked out a specific strategy.
-- Abominations are about the only exception to this - they are very tough to burn down quickly without epic gear heavier than that given to players on test. Even with chain pulling and the tank doing as much damage as he can.
-- Questline generally looks on par with the quality of the rewards given.

Regarding the Dungeon 2 set gauntlets... the Soulforge Gauntlets were unfortunately a bit higher level than intended and are being brought down to the proper level. This may have skewed your initial comparison somewhat, and I apologize.
Fundeni kuchera.
