Mage itemization can have a huge effect on how well you do, but epics are not necessarily the best way to do this. As an experiment to demonstrate this principle, I wore only blue gear to my guild's MC raid. Even though all of the mages were wearing at least some epic gear, many with at least half of their gear epic, I was still second on the overall damage meter, outdamaging everyone but one of the hunters.
Now, while it is true that I'm awesome, there's no way that my skill at hitting the button for frostbolt over and over again is significantly higher than anyone else's. However, I was wearing plus damage gear almost exclusively. With 2850 hp and 4803 mana unbuffed, I was able to keep up with and exceed the mages who had 7000+ mana, and I didn't die except when the entire raid wiped.
While there are sacrifices for plus damage gear, its quite possible to create a strong, viable mage without getting end game epics, using only blues found in the later instances. Unlike what many of the mages have said on this forum, it is not necessary to have the absolute best gear as a mage to outperform even the best equipped of a dps class in PvE. PvP is another matter, of course, but as far as PvE goes, mages can still be among the best damage dealing classes.

I applaud your wherewithal to conduct this "experiment". Regardless of people who may claim you are wrong or do not know what you are talking about, you went out and demonstrated something for yourself and to your own satisfaction. It will probably be players like you that take full advantage of additions and adjustments that will be coming with 1.9.
Now, how do you feel about survivability? :P[ post edited by Tseric ]
