Dreamfoil is one of the most irritating reagents in this game. Why? Because it's required for so many different alchemy recipes, and is in somewhat limited supply.
Here are the potions that use dreamfoil and are commonly used on raids:
Flask of distill wisdom - 30 dreamfoil
Flask of supreme power - 30 dreamfoil
Greater arcane elixir - 3 dreamfoil
Greater dreamless sleep potion - 2 dreamfoil
Greater fire protection potion - 1 dreamfoil
Greater frost protection potion - 1 dreamfoil
Greater nature protection potion - 1 dreamfoil
Mageblood potion - 1 dreamfoil
Major mana potion - 3 dreamfoil
Major rejuvenation potion - 4 dreamfoil
Flasks are typically only given to a small handful of individuals, but mana potions/dreamless sleep potions/mageblood potions are often given to all healers, and magic protection potions are often given to the entire raid, sometimes several potions per player. A guild just learning Ragnaros can easily go through 160 greater fire protection potions in a single night. A typical MC or BWL clear even for an experienced guild can take over a hundred dreamfoil just in regular potion use.
Where does dreamfoil spawn:
Western plaguelands - 10-12 at a time
Burning steppes - 8-10 at a time
Eastern plaguelands - 14-16 at a time
Un'Goro crater - 14-16 at a time
Felwood - 8-10 at a time
Azshara - 14-16 at a time
I haven't timed the respawn rate but it seems to be around 30 minutes for each spawn point.
What's the problem? Well, those zones are also prime time farming zones. For either professional/bot farmers or regular players farming for particular drops those zones are often camped to death, often with players that have herbalism as a gathering skill. So being able to even find unharvested dreamfoil can be extremely difficult except at very odd hours of the day - and even those times are bad because of the professional gold farmers. The only other options then becomes buying the dreamfoil up for sale on the auction house by these same farmers, often for extremely inflated prices. On Dalaran, for example, a stack of 20 dreamfoil on the horde side typically sells for 20-25g. This adds up quickly, as I've already shown how much dreamfoil is used in just a single instance clear. In addition, as servers become more and more mature and even more casual players have a level 60 character, more and more guilds are attempting high end content that requires the usage of these types of consumables. Demand is steadily increasing while supply has remained constant.
What's the solution? Well, I see two possibilities. Lower the spawn time on dreamfoil nodes to make them more accessible or cheaper on the auction houses like essences have become, or diversify the required reagents for end game potions typically used in raids. Why have dreamfoil as a necessary ingredient in so many potions that are used in raiding? Or Blizzard could even make certain crafting reagents like dreamfoil purchasable from select vendors (who have more than just a limited supply of 1-2.) This would provide a useful money sink that pulls money out of the server economy; as it currently stands any dreamfoil purchased by a professional farmer remains in the economy as egold sold to another player.
Any thoughts?

We don't really see this as a problem. Certainly Dreamfoil is a valuable commodity but thats a good thing. So are many of the other herbs (however we will agree that Sansam seems in less demand than the other high end herbs), but we expect there to be some variance in demand for herbs.
And again, that's positive.
In general the Auction House prices for Mountain Silversage and Icecap are comparable to Dreamfoil. Of course this will vary from realm to realm.

I generally run out of Icecap before I do Dreamfoil. I'm constantly picking up Dreamfoil every chance I get though. If I'm too lazy, I'll just buy a stack or two off the AH but that can get pricey.
Adding more of the herb to the world would make things easier for people and at the same time would devalue the worth of the dreamfoil and any potions created by it as well. This in turn will make it harder for alchemists and herbalists to make money by using the AH.

Q u o t e: I hate the way that Blizzard only looks at crafting as a way to make money. What about people who want to use what they make?
Another broken system in the game.
I've always used the potions I've made or sent them off to others for use so to me it's not a means of making money. However, there are those that do make money (in game money that is) off of these tradeskills so they need to be taken into consideration as well.
