Inn my travels in WoW I have only seen 2 fist weapons drop. One was a grey/white brass knuckles, and the other dropped in mauradon. Why aren't there more fist weapons in the game? It seems if they made a few with good stats (even if they were Of The____ stats) and damage, they would be a popular weapon.

It is more of a niche weapon, and so will never be as prevalent as other weapon-types. However, it has been suggested before and there are always considerations to broaden the number of any one weapon-type.
A particular difficulty, however, is making them off-hand items or able to be dual-wielded. Model swapping doesn't work well, due to the shape of an opposing fist. It requires fist weapons to have completely seperate model designs for right and left hand. It takes a lot of work to make something that doesn't get as much attention as your conventional weaponry.
Nevertheless, it is kept in mind for future item additions.

No. I am just offering some insight into the challenge of such a thing. What seems like a simple request to you can actually involve many man-hours of work. Please don't make me regret sharing a little insight into what situations are like. We don't really need your value judgment as it pertains to our employees work ethic.

Like I said. Seems simple on the surface.
The most difficult parts of the body to render in art are the hands, feet and face. I am sure some think it's easy as pie to just swap axes, but that just gives you an inverted right hand skin, not a left hand skin. While they may have symmetry on some planes, they don't have it on all and it results in clipping unless you remodel it specifically for the left hand.
Ever skin half of a face then just swap the axis and paste it on? Looks dumb, don't it?

Also, please consider the difference between theory and practice. There really isn't much I can say in response to "well, it seems like it should be easy" other than "well, have you actually tried it?".
