Is this true, and if so by how much?
I want to roll a character on a PvP server but if I'm going to do that I want to know that if I go horde I'm going to be ganked nonstop all day every day.

PvP realms tend to be balanced between Horde and Alliance players. If you are planning on creating a character on a PvP realm, you are going to get ganked, it is the way of life. The amount of players has less to do than the mentality of the players. Some players see Red = Dead, and no amount of either side will change that.
