I play on Bloodhoof and since the servers where taken down for the emergency patch we have been unable to get another instance running. We usually have at least one instance running during prime time and during that time the teams are usually about even and the horde usually don't start to dwindle in numbers till late night. Well was just wondering if any other high population servers are having a similar problem since the hot fix.

Yes, a Blizzard Poster is responding after this long.
Understand that I approached the server folks earlier about this and they said that it was working fine. I wanted more in-depth information about it, however, and as such I continued pressing on.
The following is what I have for you.
You first noticed a change when the Warsong Gulch fix was introduced, and there's a reason for that. When that was patched, there were improvements made to the queue system. Previously, characters would remain in queue even if they logged out. As such, the requisite 30 people would be met on each side even if there were only 10 Horde players actually online, and the "Not enough players" countdown would begin. Thus more instances would start but not many of them would actually hold the right number of people.
The change made removes characters from queue after they've been logged out for a short time, making it so that only online players are counted. The upside is that the "not enough players" issue is seen much less. The downside is that it can take quite some time for an instance to start. This is noticeable even in Warsong, but it's made quite a large difference in Alterac.
If you see your estimated wait time as "Unavailable", it means no instance has begun since the realm was restarted. The reason for this is that the requisite number of players has not been reached. It isn't broken; the 30 players on each side simply aren't there for the instance to start up.
The introduction of Battlemasters should help this problem somewhat, but that's not the only solution we're pursuing. We're investigating ways of changing the queue to allow for lower number requirements while still keeping the teams even. There are also other methods in the works, still in the conceptual stage, to attract players to a particular Battleground at a given time.
To summarize: Alterac Valley is not broken. It is not starting due to a lack of players in the queue. We're aware of the problem and are working on implementing a number of solutions that should alleviate the issue.

So youre saying, that on about 60% of the servers, there wasnt enough people to start AV for ONE WHOLE WEEK? This is hard to believe. I mean seriously.
I was shown the logs for a few realms such as Frostwolf, which is not a low population realm. In these logs it clearly displayed that, no, there was no point at which time there were enough players to begin an instance.
