Call me crazy, but some of the endgame bosses like Baron Rivendare and so forth should be given SOME sort of audio.
The only audio during the Baron fight is his horse whinnying.
The Darkmaster Gandling fight has no audio (in fact, none of the bosses in Scholo or Strat have audio).
In one of the recent patches, they added a long audio file to Ragnaros (the dialogue between himself and Majordomo) and also an audio to Onyxia.
Just thinking that maybe a few of the endgame bosses could use some audio, it really livens up the fight.

We defeinitely want to add more audio to boss fights.
On the bright side, we were able to add voice sounds to some of the encounters in Blackwing Lair.
Just to explain, one of the reasons we do not add sounds more frequently is because of the size of the sound files. We do our best to keep patch sizes to a minimum and sound files are some of the largest ones we need to patch people with. We have been refining our sound files though and are getting to the point where the size is smaller and smaller. We've also discussed giving players an option to dowload the sounds or not -- nothing is set in stone at this point but I just wanted to explain some of the "behind the scenes" realities we need to consider.
